    INGREDIENTS:
    2 tbsp allspice
    1/2tsp freshly ground nutmeg
    1/2 tsp cinnamon
    3 sprigs of thyme / dried thyme
    3-5 garlic cloves (your preference)
    2in ginger
    two small chillies (can use scotch bonnet chillies for those who dare) 
    3 tbsp of dark soy sauce
    1 tbsp of olive oil
    sprinkle of sea salt
    250g Chicken breast
    METHOD OF COOKING:
    Mix all the above and marinate for at least half an hour but ideally longer!
